Wednesday's lunch
Lunch box ice packs
A lot of people have been asking me what type of ice pack I use with my kids lunches. Well here it is.
I got them at www.greenfeet.com. They are $1.99 per ice pack and I put 2 in each lunchbox. They are made from non toxic biodegradable gel. When the kids get home from school the ice packs are still partially frozen so needless to say I am very happy with them.

New lunch box
I'm so happy to finally have a second laptop lunch box. Now I can retire my ziploc containers or use them if one of my girls leaves her lunch box at school. I got this whole set totally free by using amazon gift cards I earned from swagbucks. If you aren't already using swagbucks you should start. Tuesday's lunches
Fruit Leather
So I came across a recipe for fruit leather in Parents magazine and decided to give it a try. The recipe is very simple.
4 cups of berries(I used raspberries and blueberries)
2 Tbs. of honey
Puree in a blender then evenly spread on a baking pan lined with parchment paper. The directions were to bake it at 200 degrees for 3 to 4 hours. It took closer to 6 hours and the outside was overdone and the middle was still wet. I used a cookie sheet and I think I needed a bigger pan to make a thinner layer.
I will definitely try this recipe again and use a bigger pan and try a different variety of berries and other fruits.

lunches for Monday
Here are my kids lunches for Tomorrow
My oldest has cucumber and cream cheese sandwich's with cucumber shapes, apples and baby grapes and some home made snack mix

I've been trying this weekend to make some homemade snacks. So far I have made a simple snack mix and bought what I need to make some raspberry fruit leather. Next on my list is blueberry muffins so I can use up the blueberries I have before they go bad. Recipe and pictures for the muffins and fruit leather to follow as long as they turn out ok. :) Here is my recipe for snack mix:
~2 cups Honey Nut Cheerios
~2 cups regular Cheerios
~1/2 cup dried cherries
~1/2 cup raisins
~1/2 cup mini marshmallows
~1/2 cup mini chocolate chips
I wanted to include soy nuts as well but couldn't find them at Walmart. I'm going to check Sprouts and
maybe add them tomorrow.
Update: Just made the muffins and the batter was so tasty I'm sure the muffins will be as well. I found the recipe online and its called Ann's Awesome Blueberry Muffins
I used half the recipe because 12 muffins are enough for my family.

2 cups white sugar
1 cup vegetable oil
1 tsp. vanilla extract
4 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 cups sour cream
2 cups blueberries
1) Preheat oven to 400 degrees. Grease 24 muffin cups or line with paper muffin liners.
2) In a large bowl, beat eggs. Gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In separate bowl, stir together flour, salt and baking soda.
3) Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
4) Bake in preheated oven for 20 minutes.
Makes 24-30 muffins.
